    Did you know it takes around 2 years for wasabi roots to fully mature? We are the only sushi takeout in The Netherlands that uses real wasabi for our dishes! This offers a subtle, aromatic spiciness without the overpowering taste of fake wasabi powder, which can mask the delicate flavors of fish. And it ensures a perfect harmony of flavors in every bite.

    At Sushi Ikigai, we clean, cut, and cook our ginger to get a more delicate flavor compared to factory-produced ginger, which can often be overpowering. Each batch of ginger is marinated for a minimum of 7 days in our special kombu vinegar, enhancing it with maximum umami. The result? A ginger that perfectly complements your sushi experience, without overwhelming your palate.
