At Sushi Ikigai, we clean, cut, and cook our ginger to get a more delicate flavor compared to factory-produced ginger, which can often be overpowering. Each batch of ginger is marinated for a minimum of 7 days in our special kombu vinegar, enhancing it with maximum umami. The result?
